Courtney grew up in Fridley, MN, and is now a 3rd generation Nordeaster. After graduating from Fridley HS she navigated her collegiate career and graduated from Mankato State University with a Recreation, Parks and Leisure degree. After spending nearly 3 years working in city/government work she was drawn to find a career within the nonprofit sector, eventually landing as a Program Coordinator here at Every Meal.

Courtney is passionate about nature and all things sustainability-related. As of 2020, she acquired a certification as a Hennepin County Master Recycler & Composter. Aside from investing time in her family and friends, in her free time, Courtney can be found out in nature, hiking, kayaking, or stand-up paddleboarding. Two mantras that motivate the way she aims to show up in the world are: “Be kind to all kinds” & “We all do better when we all do better
