Bethany joined Every Meal in November of 2023 after moving to the Twin Cities from Madison, WI. There she graduated from the University of Wisconsin – Madison with degrees in Agricultural and Applied Economics and Environmental Studies. Through learning about global and local agricultural systems in her studies and professional work post-graduation, Bethany has become passionate about working toward food systems that are sustainable, equitable, and just.

Bethany has enjoyed getting comfortable in her new Minneapolis home with her partner and their three cats. She loves exploring the many public parks and recreation areas Minnesota has to offer, getting out on the water by kayak or canoe, cooking and baking new recipes, and gardening.
